If I seem a little sandwich obsessed lately, it's because I am. In fact, I always have been. To know me is to know of my deep and abiding love of carbs. My best friends will tell you stories of me coming to their homes in elementary school and, say, requesting a plain piece of sliced white bread for a snack, or having a heaping bowl of CTC (Cinnamon Toast Crunch for the uninitiated).
Food Network star Giada De Laurentiis makes a knockout Fig & Brie Panini. You should ignore its original title as a "breakfast" sandwich since it's just as good for dinner, and feel free to swap out nearly everything, including the bread (I use sourdough) and nuts (almonds are just as good and less expensive). Don't fiddle with the dried figs or brie, though: They make this sandwich sublimely sweet and melty.
